Unique wines
Unique, like every vintage
Years change, and so do wines!
A wine from an estate is too often treated like a brand/perfume, expected to be similar to previous years
so that the consumer knows what they're getting... Looking for a terroir or an identity (which doesn't necessarily exist).
The vintages are so different from each other that it is very difficult to do this without using products/additives and manipulating the grape juice or wine in order to modify its appearance, taste, tannins, aromas, etc...
all this to make the wines fit into a framework/PDO/market...
I find it a shame; I prefer to accept the vintage as it is and adapt the wine styles we can produce accordingly.
For me, that's much more logical and natural.
The only downside, of course: you have to accept making many different batches and step out of your comfort zone!
We have produced 14 different and unique wines in the space of 4 years.
Some simplified examples are shown below.
A rainy year, under-ripe?
Why not give it a try?
White wines made from red grapes?
Natural sparkling wines?
Crémants?
Rosés?
Wines without added sulfites?
Which need to have a nice acidity, well stretched to express themselves.


Solar year, over-ripe?
Why not give it a try?
Barrel-aged red wines?
Fortified wines, such as Port?
Semi-dry or sweet red wines?
Which need to have a nice sweetness, fully ripe to express themselves.


A "classic" year, with "perfect" maturity?
Excellent for making wines that are familiar, that speak to commentators, that fit within the AOP categories...
